  1. 1/2 crimson onion, finely chopped

  8. 1 cup coriander sprigs
  9. Lime wedges, to serve
  10. 1/2 cup (150g) complete egg mayonnaise
  11. 1/4 teaspoon smoked paprika
  12. 1/4 teaspoon Mexican chilli powder
  13. 2 teaspoons lime juice, more

  1. Place avocado and lime juice in a bowl and mash till nearly clean. Stir in onion, chilli, if favored, and tomato. Season.
  2. To make smoky mayonnaise, integrate mayonnaise, paprika, chilli powder, lime juice and 2 tsp water in a bowl. Season.
  3. Heat the tortillas following packet directions. Divide tortillas among serving plates. Top with guacamole, lettuce, prawns, capsicum, smoky mayonnaise and coriander. Serve with lime wedges.
